For Grappille’s first anniversary, Xavier Thuizat unveiled Perle de Bourgogne, a creation imagined with mixologist Matthias Giroud.
Designed as a meeting point between the world of French vineyards and the art of mixology, this cocktail draws inspiration from the historical and cultural richness of Burgundy’s terroirs. Xavier Thuizat and Matthias Giroud found their inspiration in Meursault, Xavier’s birthplace and a renowned reference for Burgundy’s finest white wines. Perle de Bourgogne offers a new interpretation of this exceptional terroir, where the distinctive aromatic signatures of Meursault are expressed with elegance through the art of mixology.

Available now for tasting at Grappille, Perle de Bourgogne is enjoyed as an aperitif cocktail, served chilled and designed as a true introduction to the palate. This wine-based cocktail, with a low alcohol content (14% ABV), offers a light and elegant experience, where freshness, delicate vegetal notes, and aromatic precision awaken the senses.
The cocktail’s aromatic signature
Perle de Bourgogne is crafted from a white Bourgogne Hautes-Côtes de Beaune wine from Domaine Alexandre Parigot, Marc de Bourgogne, elderflower, a blackcurrant leaf distillate, as well as the artisanal “Jardin du Cloître” liqueur by Alchimiste, featuring notes of sage, chamomile, thyme, and hyssop. A low-alcohol cocktail with remarkable character, offering an elegant, precise, and beautifully vegetal expression.
The heritage of Burgundy’s great terroirs
The Burgundy vineyard has its origins in the Gallo-Roman era before being shaped over the centuries by monastic orders. Heirs to an ancestral expertise, the monks helped reveal the unique terroirs that have made Burgundy wines world-renowned today.
The Meursault white appellation captivates with its pale gold colour with green highlights, gradually evolving towards deeper golden hues with age. Its refined bouquet reveals aromas of ripe fruit, almond and toasted hazelnut, complemented by floral notes, honey, fresh butter and citrus. A profound expression, defined by its elegant minerality.
