The 33 Grand Crus of Burgundy at the Michelin-starred restaurant Trente-Trois, two exclusive wine tasting evenings in Paris

3 min read

A few times a year, for a select few, the Dîners de Légende opened the doors to a timeless experience at Trente-Trois, the Michelin-starred restaurant in Paris. On June 11 and 12, 2026, the 33 Grands Crus of Burgundy took centre stage. Conceived as an immersive journey into the heart of Burgundy’s most prestigious wines, these two exceptional evenings brought together the finest expressions of gastronomy and oenology through an exquisite food and wine pairing menu created by Sébastien Sanjou and Xavier Thuizat, Best Sommelier of France. A dinner like no other, reserved for those seeking more than just a dinner: a true celebration of the senses.

A Look Back at the Dîners de Légende: The 33 Grands Crus of Burgundy at Trente-Trois, the Michelin-Starred Restaurant

At the Michelin-starred restaurant Trente-Trois in Paris, the Dîners de Légende once again celebrated excellence through two exceptional evenings held in an intimate and elegant setting. On June 11 and 12, 2026, dedicated to one of the greatest treasures of wine heritage — the 33 Grands Crus of Burgundy — these exceptional celebrations offered a journey to the heart of the most prestigious estates of the Burgundy vineyards.

Structured in eight courses, these dinners offered a food and wine pairing experience centred around an exceptional selection of the 33 Grands Crus. Each cuvée was carefully chosen to reveal a unique facet of the region’s terroirs.

The experience went far beyond wine tasting: it told a story of heritage, tradition, and craftsmanship shaped by Burgundy’s greatest terroirs.

A bespoke gastronomic experience by Chef Sébastien Sanjou at Trente-Trois

To complement these Burgundy wines, Chef Sébastien Sanjou has created a bespoke menu.

Each dish was conceived as a delicate balance, designed to enhance the harmony between food and wine. Seasonal ingredients, precise cooking techniques, and perfectly balanced seasoning came together to create a gastronomic composition built around the Grands Crus of Burgundy, designed to complement the finesse and depth of these legendary wines. Among the highlights of this culinary journey are Brittany langoustines with fresh herbs, charcoal-grilled Breton blue lobster served with a civet sauce, and charcoal-grilled Wagyu beef rib, accompanied by pressed potatoes and pan juices enriched with bone marrow and Tuber aestivum.

Xavier Thuizat, France's Best Sommelier: wine education at the heart of the dinner

At the heart of these prestigious wine-tasting evenings, Xavier Thuizat, France’s Best Sommelier, curates a selection of iconic wines and exceptional vintages, offering a unique interpretation of Burgundy’s terroirs. A true wine ambassador, he passionately conveys his love of wine through insightful commentary that makes each vintage immediately accessible.

Present throughout the dinners, he guided guests on a journey where each glass reveals a new facet of Burgundy.

Discovering Three Burgundy Grand Crus: Between Grape Varieties, Aromas, and Exceptional Terroirs

Among the Grand Crus presented during these Dîners de Légende, three exceptional cuvées illustrated the diversity and richness of Burgundy’s terroirs: Chambertin Grand Cru – Domaine Henri Boillot 2022, Montrachet – Domaine Fontaine Gagnard 2024, and Musigny Blanc – Comte de Vogüé 2015. Made from the Pinot Noir grape variety, Chambertin Grand Cru offers a remarkable explosion of fruit, supported by a beautiful structure and exceptional elegance. Montrachet, crafted from Chardonnay, captivates with its depth, freshness, and complexity, enhanced by refined ageing. Musigny Blanc, a rare cuvée from an iconic estate associated with this Grand Cru, reveals a dense and sophisticated expression, where finesse shapes a concentrated and elegant finish. Through each wine profile sheet, these wines tell the story of their terroirs, their grape varieties, and their distinctive aromas. Other legendary cuvées also punctuated these two exceptional evenings, including La Tâche – Domaine de la Romanée-Conti 2022, and Clos de Tart 2021, reflecting the extraordinary richness of Burgundy’s wine heritage.
